I rooted my phone, then I used mobileuncle tools to delete some system apps that were taking up too much space. During this process, I somehow accidentally removed one of the AI apps? not sure if this is correct. How can I get that back? My phone wont function correctly without it.

It depends on the phone, but what you want to look for is a method of unbricking that particular model (by model number, not by name). That will usually include files to reflash the stock ROM.

Then learn how to replace the recovery with one that allows you to make nandroid backups, and do a backup before every single change when you're playing around. It's easier to restore a backup than it is to reflash the phone with files you have to go looking for.
