How can I choose on which app to share pictures?

Hi fellow Anroid users. This is my first time so hope I'm asking this right

Every time I want to share a picture (using the share icon) I get a list of 9 apps on which I can share it on (Gmail, SMS, messenger, Linked IN etc).
I rarely use more than one app for sharing (WhatsApp), and I don't want all the other apps listed. Does anyone know how to do so?

BTW, is there an official name for the universal share icon? And why the 3 circles where chosen?
