    Settings>Display>Screen Timeout>30 Minutes

That's the longest I know you can keep the screen from going off.

Using GPS Nav is the one time I know my phone WON'T go to sleep, it stays on...

Set the screen to not turn off while on power and plug in, or use one of those birds that look like they're drinking water to continually touch the screen?

If you are actively using the Navigation function in Google Maps and you are being routed to a destination, your phone should not sleep. If you are just getting manual directions through Google Maps your screen will sleep based on your display timeout setting (the factory default setting is 1 minute).

My guess is that you are using manual directions instead of full Navigation due to battery drain? If you are, then do what EricS said above and change your screen timeout setting higher than the 1 minute default setting.
