I have a Galaxy S-20 FE. Recently when I pull it out of my pocket, it tells me that I have to wait a few minutes to try my PIN again, or gives a warning that after 5 failed attempts it will do a factory reset. Somehow my pocket is activating the "swipe" I guess.

Two days ago, I pull it out, and it informs me that the phone has been reset to factory default! This is a real Pain in the ___. I went through restoring from a backup from the previous day - oh yeah make sure you have WhatsApp set to backup periodically, or you'll lose all your messages.

Today I got the warning again. How do I set my phone so that it's not so "sensitive" to being in my pocket?

if you setup your fingerprint reader, you can use that as your lockscreen. the phone will not unlock until you use your finger. on all of my devices that had one, i never had unwanted screen touches while the phone was in my pants.
