Root How is this Possible!?!

I reformat my sdcard, SBF with RSDLite and when I boot up my phone it's exactly the same as before I did the above? Same apps, same wallpaper, etc? It's as if I simply rebooted my phone.

Reformat sdcard: just removes all your pictures, any recovery backups and backups like Titanium, not usually necessary or wanted. Unless you had a corrupt card, I would have left it as-is.

SBF: updates system files, doesn't always mean you lose data.

Ahh. My fault then. My sdcard had too much junk on it. I made a backup of it.

I wanted to wipe all data and start fresh. So how can I do this then?

Thanks. Got it. Wiping Cache seems to take a lot longer than it did before.
