If I receive an email (use gmail) from someone that's not already in my contacts in people, is there a way to copy and paste or to add the address to my contacts in people without doing it manually??

Go to gmail.com (on a computer or via Internet) and go to contacts. Under "Everyone" select the contacts that you want under "People" and move them to "My People"

Upon next sync, the new contacts will be downloaded to your phone and will show up under the People app.

Oh, sorry, I misunderstood. In GMail, just tap the little circle next to the sender. In Mail, just tap the sender and a menu will pop up, then select add to contacts.
