Help How to change, delete the 4 standard apps?

New to Samsung, refugee from HTC which I had figured out.

How do I change, delete the "messaging" and "applications" from the home screens?

Samsung's overlay does not seem as easy to use as "Sense".

Also HTC gave us the big 5 on the #1 home screen:
WiFi, Bluetooth, GPS, brightness and another one I have forgotten.

It is almost like learning another OS.

Also downloaded a program from market "Note Everything Pro" which I had bought some time ago. Download went OK but the app is no where to be found. As it holds all my data (on the SD card I hope) I would really like to find where it is hiding.
Any suggestions?

Go into applications screen, EDIT and click and drag.

Try teh app called go launcher, much better for you
