It depends on the phone. It's not usually easy to downgrade, but how difficult it is varies between manufacturers, sometimes between models (a carrier-branded phone may be locked down harder, for example).
But the big question is what the first OS version for that phone was? If it was originally released with Marshmallow or Nougat then there won't be a Lollipop build for it, in which case the answer would be "you can't".
