That really should not be a problem.

Android Market remembers all your paid apps when you login to your Google account into your new phone. You can download all your paid apps for free. On your new phone, if you go to the Android Market, go to Downloads, you will see all your purchased apps marked Purchased.

Market doesn't memorize free apps you downloaded into your previous phone. So you have to recollect from memory which ones you did.

...or use AppBrain which will keep track of your free apps as well.

Those above two ways are correct, but technically thats not "backing up" the apps. If you want to truely backup the apps, so that all settings, game characters, and associated app data are kept, the only way is to root your phone and use Titanium Backup.

I'm not sure if they are but if both phones are android 2.2 or higher it automatically reinstalls all your apps as soon as you open the market on your new phone. Assuming you've enabled sync and use the same Gmail account.

Of course your save games do indeed go unless the games clever enough to keep the save on the SD card.
