How to organize iTune with computer's music folder

OK...I really do hate iTune but I need it for my iPod. I have all of my music organized the way I like it in folders and subfolders on my computer. Now, no matter how much I try to play with iTune (creating playlist and what not), I can't seem to import my music with the way it's organized on my computer exactly into iTune. I tried Googling for the solution...but the only solutions I found was how to organize your music IN iTune. I'm thinking there SHOULD be a way right?

Have you thought about using something like Media Monkey to sync your ipod. I used to use it back when I lived on linux to sync my ipod
