How do you replace the default Apps on the home screen with something else. I would like to replace Mail or Voicemail with Google.

Just tap and hold the app icon until it allows you to drag it to the "remove" area down below. After that, go to the app list and do the same until it let's u drag to home screen.

I also forgot to mention that the method above only applies to icons. If you also wanna add widgets, there's the "+" on the bottom right. This will lead you to the widgets/apps/shortcuts/folders option so that you can add. I guess this is the easier way.

That applies to widgets too. You can hold them and remove them. To add anything to your screen you can either hit the plus sign or just tap and hold an empty spot and you can add widgets, folders, short cuts, programs, etc.
