Most of the applications on my phone are stored on the internal storage. I cannot figure out how to access the internal storage to manage these applications. I may need to reset my phone, but I don't want to lose my paid applications. Any help is greatly appreciated. Thanks.

Use a file manager. Your Captivate came with something called My Files although most people install something else. Astro is a popular (and free) alternative that is quite powerful.

Also, be sure you understand how the Captivate's storage is laid out. This is explained in the Captivate FAQ, which is a good place to always check first. ;)
