Hey guys im new here and I want to know if there are different root procedures for each operator or does it have absolutely nothing to do with it. I live in Colombia so there is no AT&T nor any of the other US operators. my question is can I still do it? Its a galaxy s3 and it has jelly bean 4.1.2. Thanks for your help!

I would also like to know if once you root it there is no turning back to recover its original manufacturer settings, and also does it prevent you from updating to the latest official version.? Welcome to the forum.
CF Auto root is the easiest way to gain your first root. Make sure you get the i9300 version from post number 3 here

You'll still need to flash a custom recovery after rooting if you want to make a nandroid backup (which I strongly suggest) or flash ROMS or kernels. The best recovery for the i9300 is philz so I'd go for that. You'll need the .tar i9300 version from post #2 and flash with Odin

Just use the first part of the guide (flashing stock firmware bit) as a reference to flash the files I linked you here. The link does contain a root guide but that's for older firmware so isn't relevant now. The root procedure now is exactly the same as flashing stock firmware just with different files put in Odin. Also there's no need to extract the philz recovery file as it's already .tar.
It's possible to unroot by flashing some stock firmware and you will need to manually update your phone after rooting instead of using kies or ota. I don't want to swamp you with info so I'll go into more detail about that once you're rooted.
