I was thinking about rooting my phone, but I'm not 100% sure yet. If I do root it, can I "un-root" it later, or is it permanent?

no,it is not permanent. there are links to methods of unrooting methods here: http://androidforums.com/thunderbolt-all-things-root/322897-thunderbolt-rooting-methods.html

using the simple unroot, basically all you do is put the correct file on your sd card, rename it PG05IMG and then power on in hboot. the phone will find the file and update back to unrooted stock. :)

How likely is it that I would brick my phone rooting/un-rooting my phone?

I have yet to see a truly bricked thunderbolt. That being said it is possible to get a "soft brick" (stuck at a point you may not have the knowledge to overcome) if you don't do your research before trying.
Just continue to ask questions and read up as much as possible. You can click my avatar and search my posts for videos of the process as well as useful guides I have linked to.

Do you know how much battery life I might gain by rooting it?

just depends on your normal useage. i personally didnt notice much gain over stock with adw launcher, and most things that sync turned off. any sense rom that you use alot of the updating sense widgets is going to suck down the battery, stock or custom.

in all fairness, tho,im pretty hard on my phone. i talk on a blue tooth alot during the day, browse the net, play games, check email, and occasionally listen to pandora or ihear radio.

unless im busy at work, cutting down phone playtime,no rom gets me thru a whole day without a recharge at some point before i go home ;)
