I rooted my phone today too. to remove the stuff I believe you need to download the app that will allow you to remove it. I've seen a couple of apps that do it but you have to pay for them. I don't know if there are free ones available. I haven't done it because i'm still reading how all these things work. I have a lot of reading to do.

Download Android Mate (free) from the Market. Open the application. Go to Apps Manager tab, then System. Pick an application you would like to delete. Long click that application, and scroll down to properties. Open properties, and write down the name of the file you would like to delete.

After you've done that, go to File Explorer tab. Hit the back arrow until you get the "no parent directory" message. Then go to system>app This is where you delete your applications. Delete the .apk and .odex file for the applications you dont want.

    Here's a list of what I deleted:
Avatar, Dual Clock, Email, GoGo, Info Alarm (Daily Brief), Kindle, Layar, Mini Diary, MobiTV, Sims 3, Slacker Radio, Telenav, Thinkdroid, Visual Voicemail.

Be careful what you delete. I deleted Talk and Talk provider, and it caused me a world of trouble. The applications I listed above didn't cause any trouble after I deleted them. If you run into any problems, see my forum post here: Start deleting bloatware from Samsung Vibrant. - Page 3 - Android Forums

Never delete anything that you're unsure about. Always ask whether or not it's safe. Most of it is pretty obvious, but if you start to get carried away and become unsure, just ask around. Plenty of people will help!
