Is it possible to use my laptop as an external monitor for my Android phone. I want to do this because I cannot find an MHL cable at the moment for my Samsung Galaxy S II.

Sort of yes, but what I am after is to use the laptop as the display (not interested in remote mouse/keyboard/sound) rather than use the phone as an RDP client.

I did search for an RDP server on the marketplace but came up empty handed. Even so, an RDP server is probably over the top as I only want a display, not full remote control.

You may have better luck looking for a VNC server; it's an open source multiplatform remoting standard that is available on many platforms.

Thanks for the suggestion but the only VNC server I could find (droid VNC server) didn't really work properly. It was a little slow but more importantly for my purposes it stopped my bluetooth mouse working on the phone (which normally works fine).
