How do I go about getting the Boost Mobile LG Volt 2 stock ROM or whatever it's called?

Download both the LG Flash Tool, and the official firmware.
(If necessary, you can also download the LG drivers)
Now, place your device in Download mode, and flash the official firmware via the flash tool.

On that firmware site I only see the LG Volt listed not the Volt 2.
