Root Living in Japan and want to debrand my desire.

Hey everyone.

At the moment i'm living in Japan and I'm very very new to rooting and its something i've wanted to do to my Softbank Desire particularly because there's not enough internal memory for apps and its quite sluggish.
After looking at the forums I think I have a vague idea but I was hoping I could get some help in regards to keeping settings for my data plan (softbank locks/hides internet settings). I'm unsure of the steps to take. If someone could help me out that would be great.
