Now that you guys have talked me into getting a HTC Desire and deciding it will be my best choice right now. What are some of the must have apps I should be installing when I pick it up this week? Also what sight is the best to download from? Should I download directly on the phone or through computer? I appreciate the help and any other suggestions would be appreciated. Cheers from Canada.

There are tons of posts dedicated to the 'must have' apps.
I've had my Desire for a couple of months now, and my must have apps are:

3GWatchdog - tracks data usage, and so far has been pretty bang on for me
    Barcode scanner
Soundhound - an app for impressing friends with the smart that is your smartphone
Lookout - scans all apps as you install them, as well as helps you locate a lost/misplaced phone
    Multicon
TuneIn Radio - the built in one never worked for me
Zedge - one stop for wallpapers and ringtones

Once you start getting more experimental with customizing your phone, a new launcher adds interest. I like GO Launcher EX. Lots of neat features and doesnt make my phone lag.

If you are new to smartphones, I would suggest you start with getting your apps through the market. It will only show you items that are compatible with your phone (if I understand correctly)

    Cheers from Western Canada.

    • Swype - Very quick text entry by tracing out word rather than hitting letters.
    • Bubble buster - stupid but compulsive game, could cause divorce.
    • Google maps & navigation - Built in sat nav for free, excellent.
    • Hard copy - stores links to long web articles so you can easily access them later on PC.
    • Vlingo - Makes handsfree dialing via bluetooth a doddle and reads your texts to you.
    • Vignette - A higher function camera than the stock option.
    • Tunein radio - Streams any digital radio to the mobile
    • App2SD - Helps you move apps to the SD card to save precious internal memory
    • Folder organiser - Excellent tool for organising your apps
    • No lock - Lets you unlock the phone by pressing any phone button, not just the power one
    • Flashlight - What is says!
    • Google translate - great to show off the power of the phone. Select which language you want, speak an english phrase and it will show you the translation. For many langauages it will also so the translation (why did I waste my time with o-level French?)
    • Sky+ - You your phone to manage which programmes you record via Sky
    • Facebook, droidin and Hootsuite - Manage your facebook, linkedin and twitter lives via your phone.
    • 3G Watchdog - Monitors your use of 3G allowance to make sure you do not go over the monthly limit.

Hope thats enough to be getting on with.

Google My Tracks; Seems it's not been mentioned previously. A great app to track progress if you're into cycling, running, or just interested how long it takes you to walk to/from the pub.

I can definitely recommend 'ES File Explorer' in preference to Astro, which I swore by until now. Ad-free and SD movable too.

When its summer and beer gardens are in effect, could it be used to track how many times you went to the bar?

Only thing to add from me really is "Battery Time". Shows battery % in the notification bar.

Launcher Pro - better than the default Sense launcher.
GoSMS - fully featured skinnable SMS app.
Zedge - thousands of wallpapers, ringtones and notification sounds to download.
    Spotify - self explanatory.
    Angry Birds - epic game.
Bump - bump two phones together to exchange photos/contacts/etc.
3G Watchdog - monitors your internet usage and warns you when you are nearing your monthly quota.
Pure Calendar Widget - highly customisable, skinnable widget which displays all of your calendar entries and tasks from a variety of different task apps.
SetCPU (if you're rooted) - allows you to control the speed the CPU runs at. This means you can underclock the CPU to save battery life when the battery is low or the screen is off, for example.
Twicca - black, fully featured, pluginnable twitter client.
