I just bought the Pixel 3 XL. Is there a way to remove the stock date and temperature from the home screen?

Use a different launcher (such as Nova) rather than the Google one. Then you can decide exactly what you want and don't want on your screens.

Yeah, unfortunately the stock launcher doesn't really have very many options; there's no way to remove the "At A Glance" component with the date and weather.

If you otherwise like the lightweight look and feel of the launcher, though, you might check out Rootless Launcher. It's very similar to the stock Pixel Launcher but includes a variety of configurable options which aren't present by default.
