    Specifically for the HTC Eris:

What are ya'll using for this in your car. I've found everything from simple aux players (I don't have an aux plug), to bluetooth external speaker, to bluetooth handsfree with FM broadcast, etc. Many styles, many manufacturers. Here are some:

MOTOROKR T505 - Looks sweet but is over $100.
Parrot PMK5800 - A little cheaper but is it worth it?
Roadmaster Bluetooth Rearview Mirror - And still cheaper, does it work?
VR3 VRBT400M Bluetooth Speaker Mirror Kit - Another mirror kit.
Sony MEXBT3700U CD Receiver Bluetooth Hands-Free with Integrated Microphone - And finally a radio (the most expensive option)

I've seen posts from a few others that said they used their Droid in the car - but no details of how.

    So, what do people use?
    What do people like like?
Which works and which was returned?

I use the MOTOROKR T505. The FM transmitter works great. Even the phone calls can go through the FM. As a stand alone for a speaker phone, it is loud enough while driving. There are better prices out there. I got mine for around $50 over a year ago.
