Is there a non-rooted non-sdk way to take screenshots on this phone?
Not that I know of, but you can probably find something in the marketplace
No, the only ways are to be either rooted or through the sdk.
I thought that the touchwiz was pretty ugly in all of the videos, but it actually doesn't look bad on yours. I like how the dock is transparent.
How do you get that clock? I thought it was only on Sense.....?

yea how did you get that clock, closest I have is from beautiful widgets which are ugly in comparison

I noticed your "dock" has been edited, is this cause you rooted or did your phone come this way?
you can change your apps in your dock
go into the appdrawer, hit menu, change the sorting to customized
hit menu, goto edit, then you can move the crap in the dock

Thanks. I'm using LauncherPro with the Froyo dock, Beautiful Widgets for the clock with the "plain grey" weather skin, BattStatt for the battery, SwitchPro for the controls along the bottom of the screen.
Not sure if I'm fully content with it yet though. But it's close, I think.
Any way to change the dock to something more like Sense?
I'm also looking for a complete Sense skin/theme for the entire phone; so bump.

Where the heck do you find the sense style clock? I have found that are similar but not like the above ones...

As an iPhone user since day one in 2007, I'm really enjoying the customization of various screens (still a fan of iOS, though, the world isn't black&white, you know). I am having a lot of fun with this phone.
