Help Reset Question

My phone wouldnt power on so I sent it back to HTC. They sent it back to me with Gingerbread. I do not want gingerbread. If I do a reset will the phone go back to Froyo or Gingerbread? I want to be able to create my own APN. Gingerbread doesnt allow this setting which I am kind of upset about.

How do you do a full factory reset on gingerbread?

Is there a way to back up my apps. I have a free mp3 download program and I do not want to loose it.

A factory reset will not return your phone to froyo. There are many others that wish it was that simple. I saw someone recommend a way that involved putting the old froyo os on the sd card and rebooting the phone or something like that.
