Root ROM questions.....

I have a rooted EVO 4g 3.29.651.5 and would like to put a custom ROM on it but am still really new to android scene and feel like I don't know exactly what I'm doing. Is there anything I should/need to do before I flash a custom ROM? What are some really cool, stable ROMS, that are easy to put on my EVO? I see a bunch of available ROMS on ROM manager, but don't know what's what.

Can you also tell me what the benefits/risks are when flashing custom ROMS? Please advise and thanks in advance!
