rooted device

I have NOTE 5, I have rooted my old phone before 2 or 3 years ago and I need to root this phone.
I remembered there is an app that can root the phone without PC,

my question,
when you root the device some app will not work, I need to root the device to delete some system application.

The first question is there a way I can remove provider application by a factory reset. using the boot screen in the phone.
the second question if I rooted in a traditional way and uninstall the app that i don't want. can I unrooted later and make the app that stops working due to root device to work again.
I recall one day I had rooted a device and i unrooted by app then bank app working again.
is this going to be the same or phone become smarter?
if someone tried this recently please help
