Excuse my ignorance, but will rooted phones be able to download the new Gingerbread update when it's available? Thanks, I'm new to all this.

You will have two choices. The best choice will be to wait until your rom chef cooks in Gingerbread and then flash that. Your other choice will be to unroot your phone and update via the official route.

Yeah Men I can tell you that a Rooted ROm of Gingerbread will be available even before your Manufacturer releases the official version
We have seen how Motorola HTC and I am pretty sure Samsung will take something like 2 months to release their version

I would not accept the update ota if it were me. When they updated to froyo if everyone remembers, it took about 2 mos to find a root exploit, and who knows they may close all doors and one may not be found. wait for the rom devs to make a rooted version and be happy
