I may be way off base here, but isn't Gingerbreak for phones running Gingerbread (2.3) and the Iconia runs Honeycomb (3.x)?

Have you checked Iconia a500 all-things-root?

Which version of Gingerbreak? You're using the modified version, correct?

Anyways, don't forget to disable USB debugging or else you won't be able to mount your tab to your computer.

Go to settings>applications>development then turn off USB debugging. Then your computer should recognize it and you can turn on USB mount on your tab.

(I'm assuming you're trying to get the apk on your sd card so you can install gingerbreak.)

If you need visuals, you can go to youtube because there's a few step by step guides you can check out.

    Good luck!
