The only option I have to save a text message, is to copy it to the SIM card. When a text message is saved to the SIM card, where or how do you retrieve the message, without having to use a card reader?

First off there is no reader for a Sim Card for the general user. That would be an SD Card reader. The best thing to do would be to use an app like SMS Backup and Restore to back up the SMS to the SD. Then if you need to read them just restore them.
