Help Samsung galaxy tab2 for research

Hi. I am a director of a research project. Our research assistants will be collecting epidemiological data using samsung galaxy tab 2 10.1 tablets. The application we will be using will take the system date and time as some of the variables that we will collect. Is there any way to lock the system date and time so that they can not be modified by the research assistants? Maybe I can add some sort of administrator account that only has access to change date and time of the system? Make sure that a password needs to be entered when date and time are modified. Any ideas?

Proper dataloggers would be a better option, I'd say unless you make use of an external survey data logging service.
