Is there a way to set which apps your screen auto-offs on?

The issue is I am playing this Ingress game and the screen auto-offs while I am walking or driving around. The game options are very anemic so there is nothing there for this.

You can use Tasker to do this. It's a paid app and takes a bit of getting used to but can use it for anything: When condition X is met (which can be an app being started) Do Y. It then reverses that when the condition is no longer met unless told not to.

OK, using Tasker for that one thing is overkill but you would find many other uses for it. Mine turns on Wifi when I get in range of the cell tower near my house among other things.
