this is completely maddening. I like my brightness to be set to "automatic" but it seems that once a day, I bring my phone out of sleep and it's been set to full brightness. I have actually witnessed the brightness control switch from automatic to full, while the setting screen was open! has anyone else seen this (and not necessarily while the setting screen was open)?
any idea what application(s) might have access to the brightness control setting and be changing it in the background?

This issue has been posted before in these forums, and others.
Some users have even reported that this issue survived rooting their device, but say nothing about whether or not they encountered the issue before or following re-installing their apps from Market (which most rooters do as a first thing following rooting).
If you've already gone through the settings of your apps to be sure it is not simply setting related, the question as to if it is app related can be resolved by de-installing one app at a time and running the device for a while to see if the issue has gone away; in your case you say it occurs "once a day," which means it could take you quite a while to ferret out the right app.
The other method, the one I'd use, is to de-install
all apps that you've downloaded and run the device to see if that stops the brightness issue. If it does, re-install each app in order of importance to you one at a time and run the device for a day to find out which app causes the problem.
