where did the screenshot button go with the update?

The old one on the bottom bar was a pain, but nowI don't know where it is at all!

If it was on the bottom bar it was an app that someone (from the manufacturer to the place you bought it) put there. There are plenty of screenshot apps if you don't want to read the phone's manual to find out how your phone does it without an app. (Different phones do it differently.)
