Help SD Card question

I'm running a seemingly unbranded Orange Desire HD, Android version 2.2.1.

I'm going to give the 8GB card in there to my girlfriend and buy a 16GB SD Card as HD videos take up quite a bit of space. There's a load of stuff already on the 8GB card (a few apps, what look like system folders etc, pics/vids and some kindle ebooks).

Do I need to do anything fancy to copy stuff from the 8GB to the 16GB or can I just mount the DHD as a USB Drive, copy the entire contents of the 8GB card onto a folder on my desktop, replace with the 16 GB card and copy the contents of the folder back onto the new SD Card?

Pics, vids etc I've got backed up, but will I lose any app settings (in particular my Angry Birds saves )?

Yes that will work fine. I brought over a 16gb card from my Milestone all it needed was a unmount and format. Once that was done I've dragged over a lot of stuff and everything is working great! I stayed up for two hours last night watching HD Youtube music videos lol
