switching sim cards for travel

If i switch my carriers sim card to one just for travel....what happens when i turn on the phone with a new sim card?

do i log into google with my account and all my settings remain? ie. apps,
never having a smartphone i'm not familiar with where the apps are stored or what if anything is stored on the sim card
 
Nothing is stored in the SIM card. You won't even have to re-log in with your Google account.

As long as your phone can establish connectivity to a data network (i.e. you are activated on a cell network), you're good. Switching SIM cards is not much different than switching Wifi networks.
