I have a first generation Moto Droid, with the updated 2.2 OS. Is there a way to capture a text string and keep it in a log/file?

If i understand correctly what you are asking, there is an app calles SMS backup.

It will backup all you sms messages to your Gmail online.
It will actually put a SMS folder below your inbox, sent, etc. where you can access them.
