Texting iPhone Users

    If I send long texts, they get converted to MMS, which I understand is required if they are over 160 characters. But my girlfriend has an iPhone and the result is a mess. The message becomes broken up into several texts, and the blocks are out of order. Its basically unreadable. Seems like a pretty ridiculous problem for something so basic. Is there a workaround, other than <160 character texts?

    Does this problem happen only when you text an iPhone user? or does the problem happen with other non-iOS devices too?
    Network latency is the only thing (that I'm aware of) that can cause this issue
