I have a rooted Droid Bionic and am trying to remove some of the junk apps that came preinstalled; ie Kindle. When I go to Manage Apps and select an app the only option I get is Clear Cache or Force Close. Where's the UNINSTALL?

Even with root the standard applications menu will not let you uninstall system apps. You need to use Titanium Backup for Root Users to uninstall system apps. Or go in and remove them manually.
I would personally suggest you do neither because if you brick your phone or get stuck in a bootloop there is no safe way to recover the Bionic at this point.
