Is it safe to uninstall google play apps and other stock apps that come with my phone to make it run faster?

First, are you planning to never use any google service including Play Store?
Removing any apps probably wont make the phone any faster btw

    Not drasticly mate no.
If you really dont want any google services but want your phone to still work, you can delete any google app thats visible in your app drawer safely.
What phone are you on? Theres probably better ways to speed it up

    is the phone rooted?

speed is one thing. deleting apps will not necessarily improve speed. you can root the phone, install a custom kernel, and overclock the phone for speed.

removing apps will increase internal storage, if anything.

^^ this. These forums can probably tell you how to get the bleeding edge'd best of the phone you have in better ways than just using root to remove /system apps :beer:

Instead of removing apps. Try using greenify to hibernate them, search it up on Google play.
It works like a charm (not an app killer)!

If you're rooted, ask in the All Things Root area in your devices forum. Someone should be able to offer you up a safe list of Google apps you can uninstall.

And I'll jump on the bandwagon and suggest, if you do eventually go the custom ROM route and GAPPS aren't included, consider flashing the BaNkS one. Very streamlined. I've yet to run into any trouble with any ROM I've used them on, and you can then install what you want from the Store.
