I pay $200 a month for unlimited data on my phone. Would it be cheaper to go with wifi and get a less expensive plan?

How much data do you actually use and how much could you use on wifi instead?

That will determine what plan you'd need, but I'm going to guess you could do better using more wifi [emoji3]

    I only use ~ 1 gB/month on a 6 gB/month plan

rest of the time, at home, we use WiFi

I myself scrape by using a 1 GB plan. I don't perform any updates unless I'm on my home WiFi. I hate Verizon (as I hate all carriers) but where I live their coverage is better.

which is why I have been with VZW for almost 25 years now..... none of the others can come close to the coverage area that VZW has. Not even AT&T.

Verizon's MNVOs have the same coverage for much less money. You may want to look at a few. The prepaid market is getting quite competitive. I left them over 6 years ago and have saved hundreds (if not more).
