You can extract backups from your nandroids with titanium, without having to go through the trouble of restoring the nandroid. The option is in the tibu menu.

I tried to extract several backups from the nandroid backup I did before starting the original process. Nothing worked.
I restored the original backup. The apps I wanted to recover, I sent from Titanium Backup to my gmail and dropbox accts so I would have them in two separate locations.
I wiped cache/Dalvik, flased the new modem, the ROM. Now, I've lost root again.
Did the same steps as before, but so far cannot reacquire root.

I went into my recovery (Philz) and there's a setting to restore root. I did that and reacquired root. Simple as that.
All my Titanium BU's were still there from earlier. I haven't managed to recover gallery, browser, and the weather widget. However, I've recovered everything else: Samsung keyboard, voicemails, notes, and all mms and sms messages.
    So far, no bugs!
    Thanks again to everyone here.

Stock gallery, weather widget, and internet browser are all working now.
Is it safe to move my recovery from the internal to the external storage?

If by recovery, you mean your nandroid or titanium backups, it is fine to move either to external storage. You might have to point titanium to the correct folder. There is an option to do that in the titanium menu.
