I finally updated my Verizon HTC One to Android 4.4 and found there was no easy guides out there to do it, so here you go:

Prerequisites: You should be S-Off and rooted.

1) Flash stock recovery.
a) Connect the your phone to the computer via USB.
b) Make sure the fastboot binary is in your PATH or that you place the downloaded image (1.10.605.15_recovery.img) in the same directory as fastboot.
c) Open a terminal on your PC and reboot the device into fastboot mode by typing [HIGH]adb reboot bootloader[/HIGH] or by using the hardware key combination:
Disconnect your phone from the PC (if connected) and then switch off the device. Then press Volume Down button and Power button to start the device in Bootloader mode.
d) Once the device is in fastboot mode, verify your PC sees the device by typing [HIGH]fastboot devices[/HIGH]
If you don't see your device serial number, and instead see "<waiting for device>", fastboot is not configured properly on your machine. See fastboot documentation for more info.
If you see "no permissions fastboot", try running fastboot as root.
e) Flash ClockworkMod Recovery onto your device by entering the following command: [HIGH]fastboot flash recovery 1.10.605.15_recovery.img[/HIGH]

f) Once the flash completes successfully, reboot the device into recovery to verify the installation. This can be done by typing [HIGH]fastboot boot 1.10.605.15_recovery.img[/HIGH]
Steps taken from CyanogenMod

2) Reboot and install the OTA 4.4 update.
From the Home screen, tap Settings > Phone Update > Check for Update > Download Now

3) Install CWM recovery.
a) Connect the your phone to the computer via USB.
b) Make sure the fastboot binary is in your PATH or that you place the downloaded image (recovery-clockwork-6.0.4.4-m7vzw.img) in the same directory as fastboot.
c) Open a terminal on your PC and reboot the device into fastboot mode by typing [HIGH]adb reboot bootloader[/HIGH] or by using the hardware key combination:
Disconnect your phone from the PC (if connected) and then switch off the device. Then press Volume Down button and Power button to start the device in Bootloader mode.
d) Once the device is in fastboot mode, verify your PC sees the device by typing [HIGH]fastboot devices[/HIGH]
If you don't see your device serial number, and instead see "<waiting for device>", fastboot is not configured properly on your machine. See fastboot documentation for more info.
If you see "no permissions fastboot", try running fastboot as root.
e) Flash ClockworkMod Recovery onto your device by entering the following command: [HIGH]fastboot flash recovery recovery-clockwork-6.0.4.4-m7vzw.img[/HIGH]

f) Once the flash completes successfully, reboot the device into recovery to verify the installation. This can be done by typing [HIGH]fastboot boot recovery-clockwork-6.0.4.4-m7vzw.img[/HIGH]
Steps taken from CyanogenMod

4) Install SuperSu for root.
a) Place the zip file on your phone via the USB cable (I recommend creating a directory called "!Flash" since it will be easier to find in CWM and placing it there).
b) Reboot into recovery
Open a terminal on your PC and reboot the device into fastboot mode by typing [HIGH]adb reboot bootloader[/HIGH] or by using the hardware key combination: Disconnect your phone from the PC (if connected) and then switch off the device. Then press Volume Down button and Power button to start the device in Bootloader mode.
c) Install the SuperSU zip file
d) Reboot (if prompted to "fix root" choose NO).

(Optional) If you use AdAway perform step A as listed here to get it working.
