When wifi is on and the wifi symbol is there, shouldn't the 3G symbol disappear?

Yes, it will stay there. You're just using Wifi for your data session. The phone still uses the 3G voice network for calls.

3G voice and 3G data are completely separate. Voice traverses the 3G voice network. Data traverses the 3G (EvDO RAN) network. It's a little confusing since everyone relates 3G to strictly data.
