Why so much permission? Browser / app question

    I am loading up a few apps and I am reading the permissions dolphin or firefox wants and i am like WTH... why give it so much access to my info? anyone else feel this way? also if you install and app and then uninstall does that app still have access to your data and if so how do i stop that?
