When we lived in the North Dallas area, my daughter and I would occasionally hit the road [for day trips] by heading up 35 into Oklahoma. It was a pretty drive, with lots of hills. Although I couldn't remember offhand, my friend Google Maps just helped me out with the name of a lake up there, Lake Murray. *I* have never camped there, but I believe you can camp out, or you can find hotels/motels/cabins to stay in. It's less than 100 miles from Carrollton [where I lived], a pretty drive, and should make a fun weekend outing. Just bring LOTS of mosquito repellent! (I do NOT miss mosquitoes one bit! Now back home in SoCal, I haven't seen a mosquito in eons. )

Dallas is beautiful. Have you looked into Lake Travis for camping? Also Houston has the NASA thingy going on. I have also heard the beaches of South Padre island are fabulous.

There is the Galveston pier..... Kemah and there is a schlitterbahn here as well. The only problem is really the heat. I know of a few state parks in N Houston as well that are supposed to be awesome. Six Flags Fiesta Texas As far as a "do it up " vacation.... Fiesta Texas is really nice. the Schlitterbon in New Braunsfels is the BOMB!http://www.schlitterbahn.com/Or you can essentially rent a cabin, bring your own food and drinks and play till you pass out and do it all over again. There are also some really cool caves there to break up the weekend.
