Help How can I get Lollipop to not automatically set a default app?

I just upgraded to a Samsung Note 5, and while most all is well, I can no longer choose to NOT set a default app when more than one can be used to complete an action.

That is, the default behavior I want is for the OS to ask me each and every time which app to use, UNLESS I explicitly set a default. It used to work that way.

Short of clearing the default each and every time I select which one to use, is there an OS setting or app that can restore the old behavior?

Rooting is not currently an option for me. Thanks in advance.

That's not standard Lollipop behaviour. Might be best to ask in our Note 5 forum in case this is something Samsung have done (I've never handled a Note 5 so can't rule that out).
