What is the fastest and easiest way to unroot my phone and go back to stock?

That's part of what you'll have to do, for sure. What is your current hboot version? What was your root method?

H boot 2.10.000.001
I used unrevoked to root.
I'm running cyangeon mod 6.1

Ok, so to unroot, you need to flash the unrevoked s-on tool from recovery. You can get it from the unrevoked site. There is a link in the rooting for Dummies thread. Once you flash that, and get S-ON back, you need to flash this from hboot:
