How can I stop my camera from auto-adjusting?

I am trying to create a short-film with my android phone. My problem is that the camera has a weird quirk where it adjusts the settings as it goes. The adjustment is not always smooth so the video is often tarnished when the brightness suddenly changes. Is there any way (through the camera app or another app) to have more control of this? I am fine if it is auto-adjusting its settings but I would like for it to not happen during filming.

Are there any good apps (paid or free) that give you more control of the video recording features of android and still have video stabilization?
 
In the video app, is the setting for temperature on Auto? Maybe try changing it to something else?
