1. That's the only way I've found to do it. Someone else may have a better solution though.
2. You can only freeze or remove apps if you're rooted. I'm not sure if touchwiz has the feature but I know most of the 3rd party launchers, such as go launcher can create folders where you can store you're unwanted apps. Open you're app draw and press menu, if you see new folder its possible.
In regards to 2
You can put them in a folder to hide them though, if you are worried about it taking up memory it's a silly worry as you have a LOT of space.
