Root Best Rom???

That really depends on what you're looking for. I've used cm7, sharp, and now I'm on cm9. Cm7 is very stable and sharp is nice if you're looking for a true clean froyo experience, but if you are willing to put up with no camera (for now), mtdev cm9 has been the snappiest from I've used on my triumph hands down.
 
Yeah, just use CM7 until CM9 and CM10 are stable. If you want a really nice phone, just install a launcher and optionally a locker. I'm just going to spit some out for you:

To get Holo Locker working with security, just go to CyanogenMod Settings -> Lockscreen Settings and enable Skip on security. If it doesn't work, disable and re-enable. Just lock and unlock you're phone a couple times to make sure it works.
 
I think cm7 is the best, right now im running the first test here and i think its faster than the 819 version, its alot better, but i like it
