When someone sends me a long text i only get parts of it is there a fix for that.

Do you only get the first part of the text and then it seems to cut off the last part?

Sometimes when I get long messages from certain people it will come in as two text messages back to back. It seems to me that their message is to long and their phone will only send the acceptible amount of characters or seperates it into two messages. I don't think it has anything to do with your settings on your phone.

Yeah I think this has to do with your friends' devices where the messages are coming from, not something you can control on your phone. Some devices/service plans are set up to cut off at the 160 character limit for an SMS message. Some phones have settings (or automatically) break up a long message into multiple texts to make sure the whole thing gets sent.
